Roasted Sweet Corn and Tomato Soup (भुना हुआ मीठी मकई और टमाटर का सूप)
This recipe is very rich and authentic to southern sates of America. It can be made complete meal by adding meat and served with bread loaf. It is made with few ingredients that are found in any typical American home, which inspired to make it with Indian version, yet the final product is very rich and creamy. It can me made super delicious by adding heavy cream.

- 2 cups fresh corn kernels (about 3 cobs)/ frozen/canned
- 5 ounces cherry tomatoes (about 1 cup)/ 2 ripe tomatoes chopped
- 2 cloves garlic, roughly chopped
- 1 tablespoon oil
- 1 small onion, any color, diced
- 1 red bell peppers chopped
- 16 ounces vegetable broth (2 cups)
- 1 tsp. chili powder ( adjust accordingly)
- Salt as per taste
- fresh cracked black pepper as per taste
- optional: chopped coriander leaves ,avocado slice for garnish
Method:
- Preheat oven to 400 degrees. Place corn, tomatoes, chopped red bell pepper, chopped onions and garlic on a foil-lined baking sheet. Drizzle with 1tbsp oil and sprinkle lightly with salt and pepper. Gently toss with hands and then arrange in an even, flat layer. Bake for 15-20 minutes.
- When corn tomatoes, bell pepper and onions are done roasting, add them to the pot on stove with rest of the ingredients, Bring soup to a boil and cover and simmer for 20 minutes.
- Use blender and puree until smooth. Taste and adjust the seasoning as required.
- Divide into bowls and garnish with a few corn kernels, avocado and some coriander leaves if desired.
- Note: After puree, add 1 cup heavy cream and boil for 5 more minutes makes the recipe rich and creamy.
- Note: If Owen is not there, than roast corn, bell pepper, tomatoes and garlic of direct flame, which gives a charred flavor.
