Ragada patties (రగడ పట్టీలు, ரகட பட்டிஸ், आलू  टिक्की चाट)  is a shallow fried potato patty topped with a tasty white peas curry and garnished with tangy sauces called chutney. Another snack that makes an easy transition to a one-dish meal. Piping hot and exploding with flavor.

Ingredients:

  • White or Yellow Peas  1 Cup
  • Turmeric Powder  1 Tsp
  • Cilantro  3 TbspMint  2 Tbsp
  • Garlic  2 Cloves
  • Ginger  1 Inch
  • 5 Green Chilies (Optional)
  • 1 Tbsp+1 Tsp Oil
  • Mustard seeds  1 Tsp
  • Cumin seeds  1 Tsp
  • Salt to taste
  • Cumin Powder  ½ Tsp

Ingredients for Patties:

  • 5 medium size potatoes (boiled)*
  • 2 Bread slice
  • 2 Cloves of Garlic
  • Ginger  1 Inch
  • 4 Green Chilies (Optional)
  • Turmeric Powder  1 Tsp
  • Oil as needed for shallow fry + 1 Tsp
  • Salt to taste

 

Ingredients for Garnish:

  • 1 Minced Onion
  • 1 Minced Tomato
  • Green Chutney
  • Sweet Chutney
  • Sev (Fried Indian snack)

Method:

1. Pressure cook peas with turmeric and oil until soft.
2. Add enough water to cook the peas. Cook on high heat until first whistle and then simmer for 10-15 minutes.
3. Boil and mash potatoes.
4. Add grated green chillies,garlic, ginger and oil.
5. Add moistened bread crumbs to it.
6. Then add turmeric and salt.
7. Mix potato mixture thoroughly to form a soft dough.
8. Make small patties of the mixture.
9. Now grind all the herbs to make a fine paste.
10. The peas are now cooked. Make seasoning for it.
11. Heat oil, crackle mustard and cumin seeds.
12. Add herbs paste to it.
13. Add this seasoning to peas. Add some water also.
14. Cook for sometime.
15. Now heat griddle and shallow fry the patties on low heat.
16. Fry them until golden brown from both sides.
17. Serve the ragada patties with green and sweet chutney and sev.
