Pudina Rice (புதினாக்கீரை அரிசி, పుదినా అన్నం, पुदीना चावल) It is a delightful minty flavored rice recipe. The pudina or mint flavored rice goes exceptionally well with a range of Indian vegetables and meat dishes. An easy and yet healthful rice recipe.

Ingredients to serve :
- Rice 3 cups
- Pudina (Mint leaves) 1 cup
- Coriander leaves 1 cup
- Ginger A small piece
- Onion (medium) 2 nos sliced finely
- Carrots 2 nos diced
- Peas 1 cup
- Beans 1 cup diced
- Green chillies 2 nos
- Tomato (medium) 2 nos diced
- Oil 2 tsp
- Mustard seeds 1tsp
- Black gram 1/2 spoon
- Salt 2 tsp
Method :
- Grind together pudhina, cilantro, ginger and green chillies.
- Heat 2 tsp of oil in a pan.
- Splutter mustard seeds and fry black gram.
- Add onions and saute till the raw smell of onion goes.
- Add tomato, carrot, peas and beans.
- Add the grinded mixture with it and fry till the raw smell is gone.
- Add salt and mix well.
- Wash the 3 cups of rice to this add 5 cups of water and add the mixture and cook till the rice is done.
- Serve hot with raita or papad.
