Masala vada kurma (மசாலா வாடா குர்ம, మసాలా వడ కుర్మా, मसाला वड कुर्मा) is the south Indian tasty recipe. when stuffed with some vegetables it is the delicious dish ever.

Ingredients:
Kurma ingredients:
- Onion 1 sliced
- Tomato 1/2chopped
- Ginger 1 inch piece
- Garlic 3
- Green chillis 6
- Garam masala powder 1tsp
- Turmeric 1/4tsp
- Grated coconut 2tbsp
- Green chillis 6
- Fennel seeds (sompu) 1/2tsp
- Salt to taste
Masala vada ingredients:
- Channa dal 2 cup
- Green chillies 2
- Red chillies 2
- Fennel seeds 1 tsp
- Ginger small piece
- Coriander seeds 1 tsp
- Onion 1 (finely chopped)
- Coriander leaves few (chopped)
- Curry leaves few (chopped)
- Salt to taste
- Oil for deep frying
Method:
Kurma preparation:
1. Take a pan and heat with 2 tbsp of oil.
2. Fry onions and green chillies together in oil.
3. Then make a paste with fried onions, green chillies, ginger and garlic.
4. Keep aside.
5. Again make a paste with coconut and fennel seeds (sompu).
6. Now heat the same pan with 4 tsp of oil and add the ground onion paste and fry well.
7. Then add the coconut paste and chopped tomatoes.
8. Fry until the raw smell disappears.
9. Add turmeric powder, garam masala and salt.
10. Combine well.
11. Now add 1 or 2 cups of water.
12. Cover with a lid and cook for 10 mins.
13. Then add the fried masal vada.
14. Serve with plain white rice, Roti, Paratha, etc…
Masala vada preparation:
1. Soak the dal for 2 hours.
2. Wash and drain the water.
3. Grind channa dal along with red chillies, coriander seeds, ginger and salt.
4. Grind coarsely and keep it aside.
5. Mix with chopped onions, chopped green chillies, coriander leaves, curry leaves and fennel seeds.
6. Adjust the salt.
7. Heat oil in a pan Take a lemon size ball of batter and flatten it with your palms on a plastic sheet.
8. Drop the flattened balls into the oil and fry until it turns into light golden brown colour.
9. Drain the excess oil.
10. Add the fried vadas in kurma directly.
