Goda Masala (गोडा  मसाला)   is also called as kala masala that is black in color, It is the spice mixture that is prepared in Maharashtra which is packed with aroma that is used to any curry that is prepared which gives richness to the curry. It is used in both vegetarian and non- vegetarian preparation. It has very distinctive sweet and sour flavor when it is mixed with kokum and jiggery  that is used in maharashtrian recipes it makes the dish exotic.

Ingredients:

  • Star Anise  1
  • Cinnamon 1 inch stick
  • Cardamom green 2
  • Cloves 8
  • Mace spice 1
  • Nutmeg ½ tsp.
  • Coriander seeds 1 cup
  • Poppy seeds 2 tbsp.
  • Sesame seeds 2 tbsp.
  • Bay leaf 2
  • Dry coconut ½ cup
  • Dagad phool (black stone flower) 2
  • Black cardamom 2
  • Pepper corns 8
  • Red chillies 2
  • Fennel seeds 1tsp.
  • Cumin seeds 1tsp.
  • Shajeera 1tsp.
  • Fenugreek seeds 1 tsp.
  • Hing  ¼  tsp.

Method:

  1. Dry roast all the above ingredients, separately and then allow it to cool.
  2. Once cooled grind to a fine powder and store in a glass jar.
