Carrot Custard Pudding (ശീമമുള്ളങ്കിച്ചെടി സുസ്ടര്ദ് പുദ്ദിംഗ്, క్యారెట్ కస్టర్డ్ పుడ్డింగ్, ಕ್ಯಾರೆಟ್ ಕುಸ್ತರ್ದ್ ಪುಡ್ಡಿಂಗ್) It is a nice variation to the traditional custard pudding recipe as  it has  carrots as ingredient. It is a yummy recipe for kids and elders.

Regional Dish : Kerala; Karnataka; Andhra; North India and some places in South India and its continental dish.

Calories (200 K cal), Carbohydrates (10 g), Protein (4 g), Fat (5g).

Ingredients to serve :

  • Milk 1 lt
  • Sugar 1/2 cup
  • Medium carrots 3-4
  • Agar-agar 11/2 tbsp
  • Almonds 5-8
  • Cashews 5

For custard :

  • Custardpowder 2 tbsp
  • Agar-agar 11/2 tbsp
  • Sugar 1/2 cup
  • Milk 1 ltr

For garnishing :

  • Ripe dates and almonds
  • Chopped cashew
  • Chopped fruits(any) cut to 1inch cubes

Method :

Carrot pudding :

  1. First boil carrots and cool it.
  2. Grind carrots , almonds and cashews  with sugar & milk to very smooth paste.
  3. Boil the above mixture  and add agar-agar (mix agar-agar powder in 6tbsp of water and make a paste).
  4. Keep it aside.

Custard :

  1. Boil milk and add sugar  and custard powder already mixed in milk so that no lumps are formed as above now add agar-agar paste.
  2. Keep them aside for 20-25 mins.
  3. Now when both are about to become very thick take a bowl and pour alternate layers of both custard and carrot mixture in the Middle put 2 layers of fruits and dry fruits allow it to set for 2hours later refrigerate it and serve it cold.
