Aritikaya vaepudu (అరిటికాయ వేపుడు, வழக்கை பரி , कच्चे केले तलना) Raw Plantain (Green) is called ‘Aratikaya’ in Telugu and is a popular vegetable in Southern states of Kerala and Tamil Nadu. The famous “Banana Chips” of Kerala are raw plantain slices deep fried in coconut oil.

  • Raw Banana   1
  • Coconut paste   1 cup
  • Ginger Garlic paste    2 tbsp
  • Coriander powder    1 tbsp
  • Onion Chopped    1
  • Tomatoes Chopped   2
  • Green Chillies chopped   2
  • Turmeric    1/4  tbsp
  • Cardamons   2
  • Salt to taste
  • Coriander leaves
  • Curry leaves
  • 2 Cloves
  • Cinnamon stick
  • Oil as needed

1.   Cut Banana in to slices.
2.   Add Salt, Turmeric to Banana slices and deep fry in oil.
3.   Heat 4 tbsp of oil over medium heat.
4.   Put Cloves, Cinnamon, Green Chillis, Curry leaves, Onions, Salt fry until Onions turn Golden Brown color.
5.   Put Ginger Garlic paste fry until turn Golden Brown color.
6.   Put Coconut paste fry until turn Golden Brown color.
7.   Put Tomatoes, Red chilli powder, Turmeric, Coriander powder, Cardamons fry until no lumps, Consistency should be thick.
8.   Put fried Banana pieces fry it for 10 min.
9.   If you want gravy we can add some water.
10.   Garnish with Coriander leaves.
